    DefaultNilla's Pancakes

    By request, here is the recipe for "Nilla's Pancakes"

    Nilla's buckwheat pancakes:
    • 1/2 cup (118 ml) buckwheat flour
    • 1/2 cup (118 ml) Bob's Red Mill gluten free 1 to 1 baking flour (only if you need gluten free! Can use regular white or wheat flour)
    • 2 teaspoons (10 ml) baking powder
    • 1/4 teaspoon (1.2 ml) salt
    • 1 1/4 cups (296 ml) milk (I use 2% lactose free)
    • 1 large egg
    • 1/2 teaspoon (2.5 ml) vanilla extract
    • Butter or oil for skillet

    1. Mix all dry ingredients in medium bowl.
    2. Mix milk, egg, and vanilla extract.
    3. Mix wet ingredients with dry ingredients, it will have some small lumps.
    4. Cook in skillet with butter like any other pancake.

    I use a cast iron skillet, but use what you prefer.

    The buckwheat flour I use is also "Bob's Red Mill" brand
    For any metric users, I converted cups and teaspoons to ml, hopefully it's correct.
    Just FYI, this recipe is gluten free for Amy, if you are making this for yourself or your pugs, you can use white or wheat flour. You would only need to use the gluten-free if you have an allergy (Celiac) or sensitivity to gluten.

    Everyone Nilla’s pancakes are the best!! For human and pugs haha!! My guys love them! And for us is a way to keep Nilla in our memories
